- 1 lb Chicken Sausage
- 1 lb Boneless Skinless Chicken Breasts
- 8 oz Rotini or Penne Pasta
- 1 cup Chicken Broth
- 1 cup Heavy Cream
- 1 cup Pepper Jack Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- 2 tbsp Olive Oil
- 1 Onion, diced
- 3 cloves Garlic, minced
- 1 tsp Italian Seasoning
- Salt and Pepper, to taste
- Fresh Parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until browned on both sides, about 5 minutes. Remove from skillet and set aside.
- In the same skillet, add diced chicken breasts, diced onion, and minced garlic. Sprinkle in Italian seasoning, salt, and pepper. Cook for 5 to 7 minutes until chicken is no longer pink and onions are translucent.
- Bring a pot of salted water to a boil. Add pasta and cook according to package instructions. Drain pasta but do not rinse.
- Return sausage to the skillet with the chicken mixture. Pour in chicken broth and heavy cream, stirring well and scraping the bottom. Bring to a simmer.
- Reduce heat slightly and stir in Pepper Jack and Parmesan cheese in batches. Continue stirring until cheese is melted and sauce is smooth.
- Add drained pasta to the skillet. Toss everything together and let it sit for 2 minutes off the heat. Garnish with fresh parsley.
Notes
For a lighter option, consider using low-sugar sausage and whole wheat pasta. Makes great leftovers when stored properly.
