Description

A comforting and creamy pasta dish featuring chicken sausage, Pepper Jack cheese, and a blend of flavorful ingredients, perfect for busy weeknights.


Ingredients

  • 1 lb Chicken Sausage
  • 1 lb Boneless Skinless Chicken Breasts
  • 8 oz Rotini or Penne Pasta
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Pepper Jack Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 2 tbsp Olive Oil
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1 tsp Italian Seasoning
  • Salt and Pepper, to taste
  • Fresh Parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until browned on both sides, about 5 minutes. Remove from skillet and set aside.
  2. In the same skillet, add diced chicken breasts, diced onion, and minced garlic. Sprinkle in Italian seasoning, salt, and pepper. Cook for 5 to 7 minutes until chicken is no longer pink and onions are translucent.
  3. Bring a pot of salted water to a boil. Add pasta and cook according to package instructions. Drain pasta but do not rinse.
  4. Return sausage to the skillet with the chicken mixture. Pour in chicken broth and heavy cream, stirring well and scraping the bottom. Bring to a simmer.
  5. Reduce heat slightly and stir in Pepper Jack and Parmesan cheese in batches. Continue stirring until cheese is melted and sauce is smooth.
  6. Add drained pasta to the skillet. Toss everything together and let it sit for 2 minutes off the heat. Garnish with fresh parsley.

Notes

For a lighter option, consider using low-sugar sausage and whole wheat pasta. Makes great leftovers when stored properly.
