Description

A creamy, healthy Pumpkin Hummus Dip, perfect for autumn gatherings and packed with comforting flavors.


Ingredients

  • 1 (15-ounce) can chickpeas and their liquid (undrained)
  • 1 (15-ounce) can pure pumpkin puree
  • 2 medium garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes or Aleppo pepper, plus more for garnish
  • Kosher salt
  • Black pepper
  • 3 tablespoons tahini
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Roasted pumpkin seeds or toasted pepitas, for garnish (optional)
  • Pita chips, crackers, or crudité, for serving

Instructions

  1. Separate the chickpeas and their liquid. Set a strainer over a bowl and pour the canned chickpeas through, reserving both the liquid and the chickpeas.
  2. Blend the base ingredients. In a food processor, add the reserved chickpeas, pumpkin puree, minced garlic, tahini, and lemon juice. Season with cumin, smoked paprika, red pepper flakes, salt, and black pepper.
  3. Achieve the perfect consistency. Blend until smooth, slowly drizzling in the reserved chickpea liquid to reach a creamy texture.
  4. Taste and adjust. Taste the dip and adjust seasoning as needed, blending to combine any new flavors added.
  5. Serve in style. Transfer to a serving bowl, drizzle with olive oil, and garnish with toasted pepitas and chili flakes. Serve with pita chips or vegetable crudités.

Notes

This dip can be made ahead of time and stored in an airtight container in the fridge for up to 5 days. It also freezes well for future snacks.
