Ingredients

  • 1 1/2 pounds salmon fillets
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 shallots, finely sliced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon dried thyme
  • 1 medium zucchini, chopped
  • 1 medium yellow squash, chopped
  • 1/3 cup vegetable stock
  • 1 1/2 cups marinara sauce
  • 1/4 cup heavy cream
  • 3 cups baby spinach
  • 1/4 cup fresh basil, finely chopped

Instructions

  1. Pat the salmon dry with paper towels, and sprinkle it with sea salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add the salmon, skin side down, and let it sizzle for 5 minutes, creating that beautiful golden crust.
  4. Flip the salmon and cook for an additional 2 minutes, then remove it from the pan and set it aside.
  5. Wipe out the pan, add another tablespoon of olive oil, and once it’s hot, toss in the finely diced shallots, cooking them for about 3 minutes until they become translucent.
  6. Sprinkle in the oregano, garlic powder, salt, and thyme, cooking for another 30 seconds to awaken their fragrance.
  7. Add the chopped zucchini and yellow squash, allowing them to cook for about 3 minutes, stirring occasionally until they soften.
  8. Pour in the vegetable stock, marinara sauce, and heavy cream, stirring everything together, allowing it to simmer for 5-6 minutes until the sauce thickens perfectly, coating the back of a spoon.
  9. Toss in the baby spinach, cooking until wilted for an additional minute.
  10. Return the salmon to the pan, drenching it in the velvety sauce, and sprinkle it with fresh basil before serving.
