Instructions
- In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat on medium speed until smooth and creamy, about 2-3 minutes.
- In a separate shallow dish, mix cooled espresso and coffee liqueur.
- Gradually fold crushed chocolate wafer cookies into the mascarpone mixture until combined.
- Roll portions of the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Dip each truffle briefly in the coffee mixture, then set aside.
- Roll the dipped truffles in cocoa powder until coated.
- Garnish with chocolate shavings if desired, then refrigerate for at least 1 hour to set.
