Description

A rich and creamy pasta dish featuring fresh salmon fillets, garlic sauce, sun-dried tomatoes, and spinach, perfect for a cozy dinner or an elegant meal.


Ingredients

  • 8 ounces fettuccine or linguine pasta
  • 1 pound fresh salmon fillet
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt & Pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain, reserving 1 cup of pasta water.
  2. Sear the salmon: Pat salmon dry, heat olive oil in a skillet, and sear salmon for 2-3 minutes per side until golden. Transfer to a plate to rest.
  3. Build the sauce: In the same skillet, sauté minced garlic for 1 minute, then add heavy cream and broth. Stir in sun-dried tomatoes and Parmesan cheese, simmering for 4-5 minutes until thickened.
  4. Finish the dish: Add spinach to wilt, then toss in cooked pasta and salmon. Season with salt and pepper before serving.

Notes

For a lighter option, use whole grain pasta and substitute heavy cream with cashew or coconut cream. Store leftovers in an airtight container for up to 3 days in the refrigerator.
