- 8 ounces fettuccine or linguine pasta
- 1 pound fresh salmon fillet
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup chicken or vegetable broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt & Pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain, reserving 1 cup of pasta water.
- Sear the salmon: Pat salmon dry, heat olive oil in a skillet, and sear salmon for 2-3 minutes per side until golden. Transfer to a plate to rest.
- Build the sauce: In the same skillet, sauté minced garlic for 1 minute, then add heavy cream and broth. Stir in sun-dried tomatoes and Parmesan cheese, simmering for 4-5 minutes until thickened.
- Finish the dish: Add spinach to wilt, then toss in cooked pasta and salmon. Season with salt and pepper before serving.
Notes
For a lighter option, use whole grain pasta and substitute heavy cream with cashew or coconut cream. Store leftovers in an airtight container for up to 3 days in the refrigerator.
