Ingredients

- 4 large flour tortillas
- 1 cup shredded mozzarella or vegan cheese
- 1 cup bell peppers (julienned)
- ½ cup zucchini (sliced)
- ¼ cup red onion (sliced)
- ½ cup baby spinach
- 2 tbsp olive oil
- Salt & pepper to taste
- Candy eyes or sour cream + olives for decoration
Instructions
- In a skillet, heat the olive oil over medium heat and sauté the bell peppers, zucchini, red onion, and baby spinach until lightly softened. Season with salt and pepper.
- Slice the tortillas into long, thin strips approximately 1-inch wide for the ‘bandages’.
- Lay your sautéed veggies in the center of each tortilla and top with a scoop of melted cheese.
- Wrap the tortilla strips around the filled tortilla to resemble mummy bandages and place on a baking sheet.
- Bake in a preheated oven at 375°F (190°C) for about 10-12 minutes until golden and bubbly.
- Add candy eyes or sour cream and olives once out of the oven for decoration before serving.
Notes
For a healthier option, swap flour tortillas for whole wheat, or use lower-fat cheese.
