Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Incorporate the egg and vanilla extract into the butter mixture until fully combined.
- Gradually add the flour mixture to the butter mixture, mixing on low speed until just incorporated.
- In a saucepan over medium heat, warm the heavy cream until bubbling; remove from heat and whisk in cornstarch until smooth.
- Allow the cream to cool slightly, then fold it into the cookie dough until well combined.
- Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until edges are golden but centers remain soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Sprinkle about 1 teaspoon of granulated sugar on top of each cookie and caramelize using a kitchen torch or broiler.
- Allow the caramelized sugar to cool and harden before serving.
