Description

A delightful, mouthwatering dish featuring crispy sirloin steak slathered in a glossy, irresistible sauce that balances spice and sweetness.


Ingredients

  • 360g sirloin steak
  • 4 tablespoons cornflour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon white pepper
  • 1 beaten egg
  • 4 tablespoons sunflower oil
  • 1 onion, sliced
  • 1 red chilli, finely sliced
  • 1 teaspoon minced ginger
  • 3 minced garlic cloves
  • 2 tablespoons rice vinegar
  • 3 tablespoons dark soy sauce
  • 2 tablespoons tomato puree
  • 6 tablespoons caster sugar
  • 2 tablespoons tomato ketchup
  • 2 tablespoons sweet chilli sauce
  • Sliced spring onions, for garnish
  • Extra red chilli, for garnish

Instructions

  1. Place the sirloin steak in the freezer for 30 minutes; this will firm it up, making it easier to slice thinly against the grain into 1/4-inch strips.
  2. In a mixing bowl, coat the beef strips with the beaten egg, cornflour, salt, black pepper, and white pepper.
  3. In a large pan, heat the sunflower oil over high heat until it shimmers.
  4. Carefully fry the coated beef in small batches for 1-2 minutes per side until golden and crispy. Drain on paper towels and set aside.
  5. In the same pan, stir-fry the sliced onion for 2 minutes until it becomes soft and translucent.
  6. Throw in the sliced red chilli, minced ginger, and minced garlic, stir-frying for about 30 seconds until fragrant.
  7. Add the rice vinegar, dark soy sauce, tomato puree, caster sugar, tomato ketchup, and sweet chilli sauce. Stir well and let it simmer for about 1 minute.
  8. Return the crispy beef to the pan, tossing everything together for 30 seconds to coat the meat in the sauce.
  9. Serve the dish immediately, garnishing with sliced spring onions and extra red chilli if desired.

Notes

Feel free to customize spice levels and add extra vegetables as desired. Ensure not to overcrowd the pan while frying for perfect crispiness.
