Description

A refreshing Cucumber Dill Salad that is quick to prepare, packed with flavors, and perfect for summer gatherings.


Ingredients

  • 3/4 cup Greek yogurt or plain full-fat yogurt
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons lemon juice
  • 1/4 teaspoon garlic, grated
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 1 1/2 lbs cucumbers, sliced
  • 1/2 red onion, finely sliced
  • 1/4 cup fresh dill, chopped

Instructions

  1. Prepare the dressing: In a small bowl, combine Greek yogurt, olive oil, lemon juice, grated garlic, salt, and pepper. Stir until smooth.
  2. Slice the vegetables: Cut cucumbers in half lengthwise and slice into 3mm pieces. Finely slice the red onion.
  3. Combine and toss: In a large salad bowl, combine cucumbers and red onion. Pour dressing over, add dill, and gently toss until well-coated.
  4. Serve: Enjoy immediately or chill for a refreshing twist.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Avoid freezing, as cucumbers won’t hold texture.
