Description

A delightful dessert that combines the nostalgia of caramel apples with a healthy twist using Medjool dates, chocolate, and peanuts.


Ingredients

  • 1 Large Apple (Granny Smith recommended)
  • 9 Medjool Dates, pitted
  • ½ cup Chocolate Chips, melted
  • ½ teaspoon Coconut Oil
  • ¼ cup Roasted, Salted Peanuts, chopped

Instructions

  1. Remove the pits from the Medjool dates.
  2. Flatten the pitted dates on a sheet of plastic wrap, then cover with parchment paper and roll flat with a rolling pin.
  3. Wrap the flattened dates around the center of the apple.
  4. Insert a popsicle stick into the top of the apple.
  5. Melt the chocolate chips with the coconut oil in a microwave-safe bowl until smooth.
  6. Chop the roasted peanuts and place in a separate bowl.
  7. Dip the apple into the melted chocolate, letting excess drip off.
  8. Roll the chocolate-dipped apple in chopped peanuts.
  9. Place the apple on a parchment-lined tray and chill in the refrigerator for about 15 minutes.

Notes

Store leftovers wrapped in plastic wrap in an airtight container, freeze for up to 30 days.
