A delightful dessert that combines the nostalgia of caramel apples with a healthy twist using Medjool dates, chocolate, and peanuts.

- 1 Large Apple (Granny Smith recommended)
- 9 Medjool Dates, pitted
- ½ cup Chocolate Chips, melted
- ½ teaspoon Coconut Oil
- ¼ cup Roasted, Salted Peanuts, chopped
Instructions
- Remove the pits from the Medjool dates.
- Flatten the pitted dates on a sheet of plastic wrap, then cover with parchment paper and roll flat with a rolling pin.
- Wrap the flattened dates around the center of the apple.
- Insert a popsicle stick into the top of the apple.
- Melt the chocolate chips with the coconut oil in a microwave-safe bowl until smooth.
- Chop the roasted peanuts and place in a separate bowl.
- Dip the apple into the melted chocolate, letting excess drip off.
- Roll the chocolate-dipped apple in chopped peanuts.
- Place the apple on a parchment-lined tray and chill in the refrigerator for about 15 minutes.

Store leftovers wrapped in plastic wrap in an airtight container, freeze for up to 30 days.
