Ingredients

  • 3 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 1 tbsp honey (or maple syrup)
  • 0.5 tsp finely grated lemon zest
  • 0.25 tsp vanilla extract
  • 1 tsp unsalted butter (for the skillet)
  • 1 tsp granulated sugar (optional, for sprinkling)
  • 0.25 tsp ground cinnamon (optional)
  • 0.125 tsp fine sea salt

Instructions

  1. Gather your ingredients on a clean surface.
  2. In a small bowl, mix cream cheese, honey, lemon zest, vanilla extract, and sea salt until smooth.
  3. Lay one tortilla on a flat surface and spread half of the cream cheese mixture on top.
  4. Sprinkle half of the blueberries on the cream cheese layer.
  5. Place another tortilla on top and press down gently.
  6. Melt butter in a skillet over medium heat, then add the quesadilla to the pan.
  7. Cook for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes.
  8. Remove, cool for a minute, and cut into wedges.
