- 3 oz cream cheese, softened
- 1 cup fresh blueberries
- 1 tbsp honey (or maple syrup)
- 0.5 tsp finely grated lemon zest
- 0.25 tsp vanilla extract
- 1 tsp unsalted butter (for the skillet)
- 1 tsp granulated sugar (optional, for sprinkling)
- 0.25 tsp ground cinnamon (optional)
- 0.125 tsp fine sea salt
Instructions
- Gather your ingredients on a clean surface.
- In a small bowl, mix cream cheese, honey, lemon zest, vanilla extract, and sea salt until smooth.
- Lay one tortilla on a flat surface and spread half of the cream cheese mixture on top.
- Sprinkle half of the blueberries on the cream cheese layer.
- Place another tortilla on top and press down gently.
- Melt butter in a skillet over medium heat, then add the quesadilla to the pan.
- Cook for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes.
- Remove, cool for a minute, and cut into wedges.
