Creamy mashed potatoes enhanced with sweet, caramelized onions for a delightful side dish.

- 2 lbs Yukon Gold or Russet potatoes
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 4 tablespoons butter
- 1/2 cup heavy cream (warmed)
- 1 1/2 teaspoons salt (divided)
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh chives (optional)
Instructions
- Peel and chop the potatoes into even chunks.
- Place the chopped potatoes in a large pot, cover with cold water, and stir in 1 teaspoon of salt. Bring to a boil.
- Once boiling, reduce the heat and let the potatoes simmer until fork-tender, about 15–20 minutes.
- While the potatoes cook, heat olive oil in a large pan over medium-low heat. Add onions and a pinch of salt.
- Cook the onions, stirring occasionally, for 25–30 minutes until golden brown and caramelized.
- Drain the tender potatoes and return them to the hot pot.
- Mash the potatoes until smooth and creamy.
- Stir in butter and warmed cream until creamy consistency is reached.
- Season with the remaining salt and black pepper, adjusting to taste.
- Gently fold in most caramelized onions, reserving some for topping.
- Serve the mashed potatoes in a bowl, topped with reserved onions and chopped chives if desired.
Notes
Cook caramelized onions patiently for best results. For a twist, add cheese or garlic.
