Ingredients

  • 2 cups red cabbage, thinly sliced
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • 3 tbsp rice vinegar
  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey (or maple syrup)
  • 1 tbsp sesame seeds

Instructions

  1. Slice the cabbage and shred the carrots: Gather and thinly slice the green and red cabbages, then shred the carrots and place them in a large mixing bowl.
  2. Whisk the dressing: In a separate small bowl, combine rice vinegar, soy sauce, toasted sesame oil, and honey (or maple syrup); whisk until blended.
  3. Toss the vegetables with the dressing: Add sliced green onions and the dressing to the mixing bowl, tossing until all vegetables are coated.
  4. Top with sesame seeds: Sprinkle sesame seeds over the slaw just before serving.

Notes

Allow the slaw to marinate for 15-30 minutes to enhance flavors. It keeps well in the refrigerator for up to three days but is best when fresh.
