Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tsp ground turmeric
  • 6 cups vegetable broth
  • 2 cups kale or spinach, chopped
  • 1 can chickpeas (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and the onions are translucent, about 3-4 minutes.
  2. Stir in the sliced carrots and chopped celery. Cook for an additional 5 minutes, allowing the vegetables to soften slightly.
  3. Sprinkle in the ground turmeric, stirring to coat the vegetables evenly. Pour in the vegetable broth and bring to a gentle simmer. Cook for about 20 minutes, letting the flavors meld together.
  4. Stir in the chopped kale or spinach and optional chickpeas. Cook for another 5-7 minutes until the greens have wilted down and the chickpeas are heated through.
  5. Remove from heat and add lemon juice, salt, and pepper to taste. Serve warm, and enjoy the comforting goodness!

Notes

To enhance flavor, consider adding a bay leaf while simmering. If you prefer a creamier texture, blend a portion of the soup before adding the greens.
