- 1/2 cup brown sugar

- 1 pie crust (store-bought or homemade)
- 3 large eggs (room temperature)
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Roll out the pie crust into a greased baking dish, trimming any excess and poking holes in the bottom.
- Boil or bake the sweet potatoes until soft, then mash until smooth.
- In a bowl, mix the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, salt, eggs, and vanilla until creamy.
- Pour the mixture into the pie crust and spread evenly.
- Bake for 40-45 minutes or until the filling is set and a toothpick comes out clean.
- Let cool completely before slicing into squares.
