Ingredients

  • 2 cups of mashed sweet potatoes (about 2 medium)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 pie crust (store-bought or homemade)
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pie crust into a greased baking dish, trimming any excess and poking holes in the bottom.
  3. Boil or bake the sweet potatoes until soft, then mash until smooth.
  4. In a bowl, mix the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, salt, eggs, and vanilla until creamy.
  5. Pour the mixture into the pie crust and spread evenly.
