A rich, moist chocolate cake with a creamy cream cheese frosting that is perfect for any celebration.

- 2 cups All-purpose flour
- 1 3/4 cups Granulated sugar
- 3/4 cup Unsweetened cocoa powder
- 1 1/2 teaspoons Baking powder
- 1 1/2 teaspoons Baking soda
- 1 teaspoon Salt
- 2 large Eggs
- 1 cup Buttermilk
- 1 cup Vegetable oil
- 2 teaspoons Vanilla extract
- 1 cup Boiling water
- 1 tablespoon Red food coloring
- 8 oz Cream cheese (softened)
- 1/2 cup Unsalted butter (softened)
- 4 cups Powdered sugar
- 2 teaspoons Vanilla extract for frosting
- 2–3 tablespoons Heavy cream for frosting
Instructions
- Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well mixed.
- Gradually add the wet ingredients to the dry mixture, combining gently until just incorporated.
- Carefully stir in the boiling water and red food coloring.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- In a mixing bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
- If the frosting is too thick, slowly incorporate heavy cream, one tablespoon at a time, until the desired consistency is reached.
- Once cooled, place one layer on your serving plate, slather a generous amount of frosting on top, and then add the second layer.
- Frost the top and sides of the cake to create an inviting dessert ready to delight!
Notes
For a gluten-free version, use a gluten-free 1:1 blend instead of all-purpose flour. Consider using sugar alternatives for a lower-sugar cake.
