Description

A rich, moist chocolate cake with a creamy cream cheese frosting that is perfect for any celebration.


Ingredients

  • 1 3/4 cups Granulated sugar
  • 3/4 cup Unsweetened cocoa powder
  • 1 1/2 teaspoons Baking powder
  • 1 1/2 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Buttermilk
  • 1 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 1 tablespoon Red food coloring
  • 8 oz Cream cheese (softened)
  • 1/2 cup Unsalted butter (softened)
  • 4 cups Powdered sugar
  • 2 teaspoons Vanilla extract for frosting
  • 23 tablespoons Heavy cream for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well mixed.
  4. Gradually add the wet ingredients to the dry mixture, combining gently until just incorporated.
  5. Carefully stir in the boiling water and red food coloring.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  9. In a mixing bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
  10. If the frosting is too thick, slowly incorporate heavy cream, one tablespoon at a time, until the desired consistency is reached.
  11. Once cooled, place one layer on your serving plate, slather a generous amount of frosting on top, and then add the second layer.
  12. Frost the top and sides of the cake to create an inviting dessert ready to delight!

Notes

For a gluten-free version, use a gluten-free 1:1 blend instead of all-purpose flour. Consider using sugar alternatives for a lower-sugar cake.
