Description

A refreshing and vibrant salad that blends crisp fennel with sweet apples, enhanced by fresh dill and crunchy hazelnuts, perfect for any meal occasion.

Ingredients

Scale
  • 2 medium fennel bulbs, thinly sliced
  • 2 apples, cored and thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup hazelnuts, toasted and roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large salad bowl, combine sliced fennels and apples.
  2. In a glass jar or bowl, whisk together olive oil, lemon juice, honey, mustard, salt, and pepper until well combined.
  3. Pour the dressing over the fennel and apples, then add dill and chopped hazelnuts. Toss gently to coat and ensure all ingredients are combined. Serve immediately.

Notes

Dress the salad just before serving to maintain crispness. You can prepare the ingredients in advance, but it’s best to add the dressing last.
