Description

Bite into these tantalizing Firecracker Shrimp, where each piece delivers a burst of flavor that sparks excitement in every bite.


Ingredients

  • 1/4 cup sweet chili sauce
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon Sriracha
  • 1 tablespoon sodium-reduced soy sauce
  • 1 pound medium shrimp, peeled and deveined
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons peanut oil
  • 4 cups hot cooked white rice
  • 2 tablespoons bias-sliced green onions
  • 1 1/2 teaspoons toasted sesame seeds

Instructions

  1. Combine sweet chili sauce, lime zest, lime juice, Sriracha, and soy sauce in a bowl. Stir together until fully blended.
  2. With paper towels, gently blot shrimp dry before seasoning them with salt.
  3. Toss shrimp with cornstarch until they are evenly coated.
  4. Heat the peanut oil in a wok or large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes until opaque.
  5. Remove shrimp and set aside. Pour in the sauce mixture and bring to a boil.
  6. Return shrimp to the wok and toss to coat in the sauce.
  7. Serve over a bed of hot cooked rice, garnished with green onions and toasted sesame seeds.

Notes

For a lighter version, consider using low-sugar chili sauce or swapping shrimp for tofu.
