- 1/4 cup sweet chili sauce
- 1 teaspoon lime zest
- 2 tablespoons lime juice
- 1 tablespoon Sriracha
- 1 tablespoon sodium-reduced soy sauce
- 1 pound medium shrimp, peeled and deveined
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons peanut oil
- 4 cups hot cooked white rice
- 2 tablespoons bias-sliced green onions
- 1 1/2 teaspoons toasted sesame seeds
Instructions
- Combine sweet chili sauce, lime zest, lime juice, Sriracha, and soy sauce in a bowl. Stir together until fully blended.
- With paper towels, gently blot shrimp dry before seasoning them with salt.
- Toss shrimp with cornstarch until they are evenly coated.
- Heat the peanut oil in a wok or large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes until opaque.
- Remove shrimp and set aside. Pour in the sauce mixture and bring to a boil.
- Return shrimp to the wok and toss to coat in the sauce.
- Serve over a bed of hot cooked rice, garnished with green onions and toasted sesame seeds.
Notes
For a lighter version, consider using low-sugar chili sauce or swapping shrimp for tofu.
