Description

A beautifully airy and soft traditional Turkish bread, perfect for dipping or enjoying on its own.


Ingredients

Scale
  • 500 g Flour (AP or bread flour)
  • 1 tablespoon Instant Yeast
  • 1 tablespoon Granulated Sugar
  • 1 teaspoon Kosher Salt
  • 1 2⁄3 cups Water (warm)
  • 1 Egg yolk (for egg wash)
  • 1 tablespoon Yogurt (for egg wash)
  • 1 tablespoon Water (for egg wash)
  • 1 teaspoon Sesame seeds
  • 1 teaspoon Nigella seeds
  • Olive oil (optional, for brushing)

Instructions

  1. Sift the flour into a large mixing bowl.
  2. Add instant yeast, kosher salt, and granulated sugar; mix well.
  3. Pour in the warm water and combine until a soft dough forms.
  4. Transfer the dough to a stand mixer and knead on medium-high speed for about 8-10 minutes until smooth and soft.
  5. Cover the bowl with a towel and let the dough rise for about 1 hour or until doubled in size.
  6. Punch the dough down gently to release air and transfer to a floured surface.
  7. Divide the dough into two equal pieces and shape into balls.
  8. Roll each ball into a circle and cover with a kitchen towel; let rest for 20-30 minutes.
  9. Preheat oven to 225°C (440°F).
  10. For the egg wash, mix egg yolk, yogurt, and water in a bowl.
  11. Press indents around the edge and 3-4 rows inside each circle of dough.
  12. Brush with egg wash and sprinkle sesame and nigella seeds on top.
  13. Bake in the preheated oven for 15-20 minutes until golden brown.
  14. Optional: brush with olive oil after baking.
  15. Serve warm with dips or enjoy as is.
