Description
A beautifully airy and soft traditional Turkish bread, perfect for dipping or enjoying on its own.
Ingredients

- 500 g Flour (AP or bread flour)
- 1 tablespoon Instant Yeast
- 1 tablespoon Granulated Sugar
- 1 teaspoon Kosher Salt
- 1 2⁄3 cups Water (warm)
- 1 Egg yolk (for egg wash)
- 1 tablespoon Yogurt (for egg wash)
- 1 tablespoon Water (for egg wash)
- 1 teaspoon Sesame seeds
- 1 teaspoon Nigella seeds
- Olive oil (optional, for brushing)
Instructions
- Sift the flour into a large mixing bowl.
- Add instant yeast, kosher salt, and granulated sugar; mix well.
- Pour in the warm water and combine until a soft dough forms.
- Transfer the dough to a stand mixer and knead on medium-high speed for about 8-10 minutes until smooth and soft.
- Cover the bowl with a towel and let the dough rise for about 1 hour or until doubled in size.
- Punch the dough down gently to release air and transfer to a floured surface.
- Divide the dough into two equal pieces and shape into balls.
- Roll each ball into a circle and cover with a kitchen towel; let rest for 20-30 minutes.
- Preheat oven to 225°C (440°F).
- For the egg wash, mix egg yolk, yogurt, and water in a bowl.
- Press indents around the edge and 3-4 rows inside each circle of dough.
- Brush with egg wash and sprinkle sesame and nigella seeds on top.
- Bake in the preheated oven for 15-20 minutes until golden brown.
- Optional: brush with olive oil after baking.
- Serve warm with dips or enjoy as is.
