Description
A hearty Tex-Mex dish blending ground beef, cabbage, and Fritos corn chips for a crunchy twist.
Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 4 cups chopped green cabbage
- 1 cup diced tomatoes
- 1 cup canned black beans, drained and rinsed
- 1 cup canned sweet corn, drained
- 2 cups Fritos corn chips
- 1 ½ cups shredded cheddar cheese
- ½ cup ranch dressing or Southwest-style dressing
Instructions
- Brown the meat in a medium skillet over medium heat until it’s nicely browned. Drain any excess fat.
- Sprinkle taco seasoning over the beef and add a splash of water. Simmer for a couple of minutes.
- Chop the cabbage, dice tomatoes, and drain corn and black beans.
- Layer chopped cabbage in a large serving bowl, followed by seasoned beef, black beans, corn, and tomatoes. Toss gently.
- Top with Fritos corn chips and shredded cheddar cheese.
- Drizzle ranch or Southwest-style dressing on top and toss lightly before serving.
Notes
For added flavor, simmer the beef with seasoning for a longer time. Use fresh vegetables or particular spices to customize the dish.
