Description

A hearty Tex-Mex dish blending ground beef, cabbage, and Fritos corn chips for a crunchy twist.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups chopped green cabbage
  • 1 cup diced tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned sweet corn, drained
  • 2 cups Fritos corn chips
  • 1 ½ cups shredded cheddar cheese
  • ½ cup ranch dressing or Southwest-style dressing

Instructions

  1. Brown the meat in a medium skillet over medium heat until it’s nicely browned. Drain any excess fat.
  2. Sprinkle taco seasoning over the beef and add a splash of water. Simmer for a couple of minutes.
  3. Chop the cabbage, dice tomatoes, and drain corn and black beans.
  4. Layer chopped cabbage in a large serving bowl, followed by seasoned beef, black beans, corn, and tomatoes. Toss gently.
  5. Top with Fritos corn chips and shredded cheddar cheese.
  6. Drizzle ranch or Southwest-style dressing on top and toss lightly before serving.

Notes

For added flavor, simmer the beef with seasoning for a longer time. Use fresh vegetables or particular spices to customize the dish.
