A vibrant and refreshing fruit salad elevated by a zesty Lemon Jalapeno Dressing, perfect for summer gatherings.
Ingredients

- 6 cups watermelon, cut into 1-inch cubes
- 3 cups pineapple, cut into 1-inch cubes
- 1 teaspoon lemon zest
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 pinches salt
- 1 medium jalapeno, ribs and seeds removed
- 4 ounces feta cheese, cubed
- 1 tablespoon fresh mint leaves
Instructions
- In a small measuring cup, combine the lemon zest, lemon juice, olive oil, honey, salt, and minced jalapeno. Whisk until fully blended.
- In a large serving bowl, place the chunked watermelon and then add the pineapple on top. Gently toss the fruits together.
- Drizzle the Lemon Jalapeno Dressing over the fruit and carefully fold it in.
- Chill the salad in the refrigerator for a couple of hours to enhance flavors.
- Cube the feta cheese and scatter it throughout the salad. Tear and sprinkle fresh mint leaves on top.
- Gently toss the salad one last time before serving.
Notes
For lower sugar, swap honey with a stevia-based sweetener. For dairy-free, omit feta or use a plant-based alternative.
