Description

A vibrant and refreshing fruit salad elevated by a zesty Lemon Jalapeno Dressing, perfect for summer gatherings.


Ingredients

  • 6 cups watermelon, cut into 1-inch cubes
  • 3 cups pineapple, cut into 1-inch cubes
  • 1 teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 pinches salt
  • 1 medium jalapeno, ribs and seeds removed
  • 4 ounces feta cheese, cubed
  • 1 tablespoon fresh mint leaves

Instructions

  1. In a small measuring cup, combine the lemon zest, lemon juice, olive oil, honey, salt, and minced jalapeno. Whisk until fully blended.
  2. In a large serving bowl, place the chunked watermelon and then add the pineapple on top. Gently toss the fruits together.
  3. Drizzle the Lemon Jalapeno Dressing over the fruit and carefully fold it in.
  4. Chill the salad in the refrigerator for a couple of hours to enhance flavors.
  5. Cube the feta cheese and scatter it throughout the salad. Tear and sprinkle fresh mint leaves on top.
  6. Gently toss the salad one last time before serving.

Notes

For lower sugar, swap honey with a stevia-based sweetener. For dairy-free, omit feta or use a plant-based alternative.
