- 1 lb. ground turkey
- 1/2 cup panko bread crumbs
- 1/4 cup freshly grated Parmesan
- 1 medium onion, finely chopped
- 1 large egg
- 3 cloves garlic, minced
- 1 Tbsp. freshly chopped parsley
- 1 Tbsp. finely chopped chives
- 1 Tbsp. milk
- Kosher salt, and freshly ground black pepper to taste
- 1 Tbsp. extra-virgin olive oil
- 2 Tbsp. butter
- 1/4 cup low-sodium chicken broth
- Roasted spaghetti squash, for serving
Instructions
- Preheat your oven to 350 degrees F.
- In a large bowl, stir together the ground turkey, panko bread crumbs, Parmesan, finely chopped onion, egg, garlic, parsley, chives, and milk until fully combined. Season generously with salt and freshly ground pepper.
- Form the meat mixture into 1 1/2-inch balls, rolling them snugly between your palms.
- Heat the olive oil in a large skillet over medium heat. Once it shimmers, add the butter and allow it to melt.
- Sear the meatballs in the skillet, rolling them every few minutes until they are beautifully golden on all sides, about 4 minutes total.
- Pour in the chicken broth and cover the skillet. Simmer for another 6-8 minutes until cooked through.
- Garnish with fresh parsley and an extra sprinkle of Parmesan before serving over a bed of roasted spaghetti squash.
Notes
Avoid overcooking the meatballs to ensure they stay moist. Can be served with marinara sauce or creamy polenta.
