Ingredients

  • 4 chicken breasts, boneless, skinless
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 4 large potatoes, peeled and chopped
  • 1/2 cup heavy cream
  • 3 tablespoons butter
  • 1 pound carrots, peeled and cut into sticks
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the minced garlic, olive oil, Italian herbs, salt, and pepper in a bowl. Rub the mixture over the chicken breasts.
  3. Place the seasoned chicken in a baking dish and roast for 25-30 minutes until cooked through.
  4. In a pot, bring salted water to a boil. Add the chopped potatoes and cook until tender. Drain and mash with heavy cream and butter. Season with salt.
  5. Toss carrot sticks with olive oil, salt, and pepper. Roast in the oven for about 20 minutes.
  6. Plate the garlic herb chicken with creamy mash and roasted carrots, garnished with fresh parsley.

Notes

Consider marinating the chicken ahead of time for enhanced flavor. You can add red pepper flakes for a bit of spice or mix grated parmesan into the mashed potatoes.
