Description

A hearty and comforting skillet dish featuring tender sirloin steak and buttery Yukon gold potatoes, infused with aromatic herbs and rich flavors.


Ingredients

  • 1.25 lb sirloin steak, cut into 1-inch pieces
  • 1.25 lb baby Yukon gold potatoes, halved
  • 2 tbsp olive oil, divided
  • 1.25 tsp kosher salt, plus more to taste
  • 1 tsp black pepper, freshly ground
  • 0.75 tsp paprika
  • 0.5 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 0.25 cup low-sodium beef broth
  • 3 tbsp unsalted butter
  • 2.5 tsp garlic, minced
  • 1.5 tsp fresh rosemary, chopped
  • 1.5 tsp fresh thyme, chopped
  • 0.25 tsp crushed red pepper flakes (optional)
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Cut sirloin steak into 1-inch pieces, halve baby Yukon gold potatoes, mince garlic, and chop rosemary and thyme.
  2. Sear the Steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add steak, sprinkle with salt and pepper, and sear for 3-4 minutes. Remove and let rest.
  3. Cook the Potatoes: Add another tablespoon of olive oil to the skillet. Cook halved potatoes with onion powder, paprika, and additional salt for 15-18 minutes until golden and fork-tender.
  4. Add Flavor: Push potatoes aside, add butter and minced garlic to the center, and sauté until fragrant.
  5. Combine Ingredients: Return seared steak, drizzle with Worcestershire sauce, add beef broth and fresh herbs. Optionally add crushed red pepper flakes, and cook for an additional 2-3 minutes.
  6. Finish It Off: Squeeze lemon juice over the skillet, stir gently to combine.
  7. Garnish and Serve: Sprinkle with fresh parsley and serve immediately.

Notes

For best results, allow steak to rest after cooking. Adjust seasoning based on personal preference.
