- 2 tbsp all-purpose flour
- 1 cup vegetable broth
- 1/2 cup sour cream
- 1 tsp Dijon mustard
- 1 tbsp soy sauce
- Salt, to taste
- Black pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare your ingredients by slicing the mushrooms, dicing the onion, and mincing the garlic.
- Heat butter and olive oil in a large skillet over medium-high heat until melted and bubbling.
- Add the sliced mushrooms and cook until golden brown and moisture evaporates, about 5-7 minutes.
- Lower the heat and add the diced onion. Cook for 3-4 minutes until soft and translucent.
- Add the minced garlic and cook for 1 minute until fragrant.
- Sprinkle the flour over the mixture and stir well to coat.
- Slowly pour in the vegetable broth, stirring to form a smooth sauce.
- Add the Dijon mustard and soy sauce, allowing to simmer for 5-7 minutes.
- Reduce heat to low and gently stir in the sour cream.
- Season with salt and pepper to taste, garnish with chopped parsley, and serve hot.

For a quick version, prep ingredients in advance. If desired, let the sauce simmer longer for richer flavor. Use fresh mushrooms for the best texture.
