Ingredients

  • 1 lb mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 cup vegetable broth
  • 1/2 cup sour cream
  • 1 tsp Dijon mustard
  • 1 tbsp soy sauce
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare your ingredients by slicing the mushrooms, dicing the onion, and mincing the garlic.
  2. Heat butter and olive oil in a large skillet over medium-high heat until melted and bubbling.
  3. Add the sliced mushrooms and cook until golden brown and moisture evaporates, about 5-7 minutes.
  4. Lower the heat and add the diced onion. Cook for 3-4 minutes until soft and translucent.
  5. Add the minced garlic and cook for 1 minute until fragrant.
  6. Sprinkle the flour over the mixture and stir well to coat.
  7. Slowly pour in the vegetable broth, stirring to form a smooth sauce.
  8. Add the Dijon mustard and soy sauce, allowing to simmer for 5-7 minutes.
  9. Reduce heat to low and gently stir in the sour cream.
  10. Season with salt and pepper to taste, garnish with chopped parsley, and serve hot.

For a quick version, prep ingredients in advance. If desired, let the sauce simmer longer for richer flavor. Use fresh mushrooms for the best texture.
