These Gingerbread Cheesecake Cookies are the perfect blend of spiced gingerbread and creamy cheesecake, making them a delightful holiday treat.


Ingredients

  • 1 cup packed brown sugar
  • 2 tsp ground ginger
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • A pinch of salt
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the butter and brown sugar together until fluffy, then add the eggs one at a time along with the vanilla.
  4. In a separate bowl, mix the cream cheese with powdered sugar and vanilla until smooth.
  5. Scoop dollops of dough onto lined baking sheets, make indentations, fill them with cream cheese mixture, and cover with more dough.
  6. Bake for 12-15 minutes until golden around the edges. Cool on a wire rack.
