- 1 lb chicken breast, cubed
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 cucumber, grated
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt to taste
- 4 skewers
Instructions
- In a large mixing bowl, combine the olive oil, 2 tablespoons lemon juice, minced garlic, oregano, salt, and pepper. Whisk until well blended.
- Add the cubed chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
- Remove chicken from refrigerator and thread onto skewers.
- Preheat the grill to medium-high heat.
- Grill the skewers for about 10-12 minutes, turning occasionally until fully cooked.
- In a separate bowl, mix Greek yogurt, grated cucumber, 1 tablespoon lemon juice, fresh dill, and a pinch of salt until well combined.
- Serve the grilled chicken hot off the grill with tzatziki sauce on the side.
Notes
For deeper flavor, marinate the chicken overnight. Soak skewers in water for 30 minutes before grilling to prevent burning.
