- 1 egg

- 4 cups chicken broth
- 2 tablespoons olive oil

Instructions
- In a large bowl, combine ground beef, grated onion, uncooked arborio rice, parsley, dill, beaten egg, oregano, and a pinch of salt and pepper. Mix gently to combine.
- Shape the mixture into golf ball-sized meatballs and chill in the refrigerator for 15-20 minutes.
- In a pot, bring chicken broth and olive oil to a gentle simmer over medium heat.
- Add chilled meatballs to the simmering broth, cover, and cook for 30 minutes over low heat.
- For the lemon sauce, whisk together eggs and lemon juice in a bowl.
- Temper the egg mixture by slowly adding hot broth while whisking constantly.
- Return the tempered mixture to the pot with meatballs and cook on low heat for an additional 5-10 minutes.
- Serve the meatballs and sauce warm, garnished with dill or lemon wedges, if desired.
