Description

An indulgent Grilled Cheese Burrito that combines crispy, buttery tortillas with a warm, cheesy filling and Mexican spices, reminiscent of a fast-food favorite.


Ingredients

  • 1 pound lean ground beef
  • 1 envelope taco seasoning
  • ¼ cup water
  • 15 ounces Rico’s nacho cheese sauce
  • 2 cups prepared Mexican rice
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon chipotle sauce
  • Sour cream (to taste)
  • Tortilla Strips (to taste)
  • 4 burrito-size tortillas
  • 2 cups shredded Colby Jack cheese

Instructions

  1. Heat a skillet over medium heat and brown the lean ground beef. Drain excess grease.
  2. Add taco seasoning and water; simmer for about five minutes.
  3. In a bowl, mix mayonnaise and chipotle sauce.
  4. Layer tortillas with nacho cheese, seasoned beef, Mexican rice, chipotle mayo, sour cream, and tortilla strips.
  5. Fold burritos tightly and place seam-side down on a skillet with melted cheese.
  6. Cook until golden brown, flipping to crisp all sides.
  7. Serve hot and enjoy!

Notes

For a healthier alternative, substitute ground beef with turkey or plant-based protein and use whole-grain tortillas.
