Description
A vibrant, flavorful dish featuring grilled vegetables and tender gnocchi, topped with creamy goat cheese for a refreshing summer meal.
Ingredients
Scale
- Kosher salt
- 16 oz. gnocchi
- 10 Tbsp. extra-virgin olive oil, divided
- 1 large zucchini, cut into 1/2” rounds
- 1 large red onion, cut into 1/2” pieces
- 1 bell pepper (preferably yellow), cut into 1″ pieces
- 2 ears of corn, shucked
- 2 scallions, thinly sliced
- 3 Tbsp. finely grated Parmesan
- 3 Tbsp. fresh lemon juice
- 2 oz. crumbled goat cheese
Instructions
- Bring a medium pot of salted water to a boil. Cook the gnocchi in the boiling water for about 2 minutes or until they float. Drain and toss with 2 tablespoons of olive oil; set aside.
- Prepare the grill for medium-high heat. In a large bowl, toss zucchini, onion, bell pepper, 3 tablespoons of olive oil, and 2 teaspoons of salt.
- Grill the vegetable mixture and corn for 8 to 10 minutes until charred. Remove corn kernels from cobs.
- Grill the gnocchi for 2 to 3 minutes until marked. Use skewers or foil to prevent sticking.
- Whisk together scallions, Parmesan, lemon juice, and remaining olive oil. Toss with grilled vegetables and gnocchi. Top with crumbled goat cheese.
Notes
Ensure the grill is preheated for best results. Customize with vegetables of your choice if desired.
