- 2 lbs boneless skinless chicken breasts, cut into 1.5-inch cubes
- 1 tbsp olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1 tsp garlic powder
- 4 garlic cloves, minced
- 3/4 cup grated parmesan cheese
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
- 2 tbsp melted butter (for basting)
- 1/4 cup grated parmesan cheese (for topping)
- 1 tbsp fresh parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Prep the Chicken: Begin by cutting the chicken breasts into even 1.5-inch cubes and pat them dry with a paper towel for that perfect grill sear.
- Marinate the Chicken: In a large bowl, combine olive oil, ranch seasoning mix, garlic powder, minced garlic, grated parmesan, black pepper, paprika, lemon juice, and parsley. Add the chicken cubes and toss until they are completely coated. Cover and refrigerate for at least 30 minutes—up to four hours for deeper flavor infusion.
- Skewer the Chicken: Once marinated, thread the tender chicken pieces onto skewers, leaving a bit of space between each piece for even cooking.
- Grill the Skewers: Preheat your grill or grill pan over medium-high heat and lightly oil the grates. Place the skewers on the grill and let them cook for about 10-12 minutes. Make sure to turn them every 2-3 minutes, until the internal temperature reaches a juicy 165°F.
- Baste and Finish: During the last minute of grilling, brush with melted butter and sprinkle with additional parmesan cheese.
- Serve: Transfer the skewers to a serving plate, sprinkle with fresh parsley, and serve alongside lemon wedges.
Notes
For best results, marinate the chicken for at least 30 minutes. You can substitute chicken with shrimp, steak, or firm vegetables.
