- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 lb ground beef
- 2 medium zucchinis, sliced
- 1 can diced tomatoes
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the diced onion and minced garlic in a skillet over medium heat until translucent.
- Add the ground beef, cook until browned.
- Stir in the Italian seasoning, along with salt and pepper to taste.
- Layer the zucchini slices in a baking dish, followed by the cooked meat mixture and then the diced tomatoes.
- Sprinkle mozzarella cheese on top.
- Bake for 25-30 minutes, or until zucchini is tender and cheese is bubbly.
Notes
You can add chopped bell peppers or mushrooms for extra flavor. For a spicier kick, use red pepper flakes.
