- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 2 cups fresh spinach, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Fresh cilantro or parsley, for garnish
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- In a large skillet over medium heat, add the olive oil. Once heated, add the chopped onion and minced garlic; sauté for 3-4 minutes until translucent.
- Add the ground turkey to the skillet and cook until browned and fully cooked through, about 7-10 minutes.
- Stir in the diced sweet potatoes, smoked paprika, cumin, salt, and black pepper. Continue to cook for an additional 5 minutes.
- Add the spinach and stir until wilted, about 2 minutes.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading evenly.
- Sprinkle shredded mozzarella cheese on top.
- Bake for 20-25 minutes, until the cheese is melted and bubbly, and sweet potatoes are fork-tender.
- Cool slightly and garnish with fresh cilantro or parsley before serving.
Notes
Feel free to substitute ground turkey with chicken or lean beef if preferred. Add more vegetables for additional nutrition.
