Description

Ingredients

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 14 tablespoons unsalted butter (room temp)
  • 2 teaspoons vanilla extract
  • 1 egg yolk
  • 1/2 cup 100% pure pumpkin purée

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
  2. In a separate bowl, mix butter and sugar on medium speed until light and fluffy.
  3. Add egg yolk, vanilla, and pumpkin purée, mixing until smooth.
  4. Slowly add the flour mixture, keeping the mixer on low speed.
  5. Preheat your oven to 350°F.
  6. Refrigerate the dough for about 20 minutes.
  7. Roll dough into 1-inch balls, toss in sugar and place on a lined baking sheet, slightly flattening them.
  8. Bake for 15 minutes, rotating the pan halfway through.
  9. Let cool on the tray for 2 minutes before transferring to a wire rack.
