- 1 egg yolk
- 1/2 cup 100% pure pumpkin purée
Instructions
- In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a separate bowl, mix butter and sugar on medium speed until light and fluffy.
- Add egg yolk, vanilla, and pumpkin purée, mixing until smooth.
- Slowly add the flour mixture, keeping the mixer on low speed.
- Preheat your oven to 350°F.
- Refrigerate the dough for about 20 minutes.
- Roll dough into 1-inch balls, toss in sugar and place on a lined baking sheet, slightly flattening them.
- Bake for 15 minutes, rotating the pan halfway through.
- Let cool on the tray for 2 minutes before transferring to a wire rack.
