Description

A bright and spicy salad with grilled chicken, harissa paste, mixed greens, and crunchy pita chips.


Ingredients

  • 2 boneless skinless chicken breasts
  • 15 tbsp harissa paste
  • 1 tbsp olive oil
  • 4 cups mixed greens (spring mix, arugula, or your favorite blend)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cucumber, sliced thin
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pita chips, crushed
  • Salt and pepper to taste
  • Optional: lemon wedges for serving

Instructions

  1. In a mixing bowl, combine the harissa paste with olive oil to create a marinade.
  2. Coat the chicken breasts with the marinade and season with salt and pepper.
  3. Heat a grill or pan over medium heat and sear the chicken for 6-7 minutes on each side.
  4. Allow the chicken to rest before slicing.
  5. In a bowl, toss together mixed greens, cherry tomatoes, cucumber, and red onion.
  6. Add sliced chicken on top, drizzle with harissa or dressing, and sprinkle with feta and pita chips.
  7. Serve immediately with lemon wedges, if desired.

Notes

For a lighter version, consider using a homemade low-sugar harissa or swap feta cheese for a dairy-free option.
