A bright and spicy salad with grilled chicken, harissa paste, mixed greens, and crunchy pita chips.
Ingredients

- 2 boneless skinless chicken breasts
- 15 tbsp harissa paste
- 1 tbsp olive oil
- 4 cups mixed greens (spring mix, arugula, or your favorite blend)
- 1/2 cup cherry tomatoes, halved
- 1/4 cucumber, sliced thin
- 1/4 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup pita chips, crushed
- Salt and pepper to taste
- Optional: lemon wedges for serving
Instructions
- In a mixing bowl, combine the harissa paste with olive oil to create a marinade.
- Coat the chicken breasts with the marinade and season with salt and pepper.
- Heat a grill or pan over medium heat and sear the chicken for 6-7 minutes on each side.
- Allow the chicken to rest before slicing.
- In a bowl, toss together mixed greens, cherry tomatoes, cucumber, and red onion.
- Add sliced chicken on top, drizzle with harissa or dressing, and sprinkle with feta and pita chips.
- Serve immediately with lemon wedges, if desired.
Notes
For a lighter version, consider using a homemade low-sugar harissa or swap feta cheese for a dairy-free option.
