Description

A delicious dish featuring moist salmon fillets marinated in spicy harissa and paired with vibrant broccolini, perfect for a quick weeknight meal.


Ingredients

  • 1 1/2 pounds salmon fillets
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon harissa
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 2 teaspoons lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 2 bunches broccolini, ends trimmed

Instructions

  1. Preheat your oven to 400°F.
  2. In a small bowl, combine the parsley, harissa, olive oil, honey, lemon juice, garlic, onion powder, and salt to make the marinade.
  3. Pat the salmon dry and place it on a parchment-lined sheet pan.
  4. Surround the salmon with the broccolini.
  5. Slather the harissa mixture over the salmon, making sure it’s fully covered.
  6. Pour the leftover marinade over the broccolini and toss to coat.
  7. Bake for 14 to 16 minutes, or until the salmon reaches an internal temperature of 145°F.
  8. Remove from the oven and serve immediately.

Notes

Ensure not to overbake the salmon for the best texture. Store leftovers in an airtight container or freeze for up to three months.
