Ingredients

- 2 medium zucchini
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 1–2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchinis and sprinkle with salt. Let sit for 10–15 minutes to draw out moisture.
- Use a kitchen towel to squeeze out excess moisture from the grated zucchini.
- In a bowl, mix zucchini, eggs, flour, Parmesan, green onions, garlic, salt, and pepper until combined.
- Heat olive oil in a skillet over medium heat.
- Scoop 2 tablespoons of batter for each fritter and shape into patties. Cook for 3–4 minutes on each side until golden brown.
- Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dip.
Notes
For extra flavor, add herbs like basil or parsley. Consider sautéing garlic in oil for enhanced aroma.
