Description

Crispy and flavorful fritters made with fresh zucchini, perfect as a snack or appetizer.


Ingredients

  • 2 medium zucchini
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or chives
  • 1–2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10–15 minutes to draw out moisture.
  2. Use a kitchen towel to squeeze out excess moisture from the grated zucchini.
  3. In a bowl, mix zucchini, eggs, flour, Parmesan, green onions, garlic, salt, and pepper until combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Scoop 2 tablespoons of batter for each fritter and shape into patties. Cook for 3–4 minutes on each side until golden brown.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  7. Serve hot with your favorite dip.

Notes

For extra flavor, add herbs like basil or parsley. Consider sautéing garlic in oil for enhanced aroma.
