- 1 box (15.25 oz) white or yellow cake mix
- 1 box (3.4 oz) instant pistachio pudding mix
- 3/4 cup vegetable oil
- 3 large eggs
- 1 cup cold water
- 2 boxes (3.4 oz each) instant pistachio pudding mix
- 2 cups cold milk
- 1 tub (8 oz) whipped topping, thawed
- 1 tub (8 oz) whipped topping
- 1/2 cup chopped pistachios, shelled and unsalted
- Optional: maraschino cherries or white chocolate shavings for garnish
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, combine the cake mix, the instant pistachio pudding mix, vegetable oil, eggs, and cold water.
- Beat the mixture for 2-3 minutes until it becomes smooth and fluffy.
- Pour the batter into a greased 9×13 inch baking dish, spreading it evenly.
- Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, let the cake cool completely on a wire rack.
- In a separate bowl, whisk together the pistachio pudding mix and cold milk for about 2 minutes, until the mixture thickens.
- Gently fold in one tub of whipped topping to create a light, airy mixture.
- Refrigerate this pistachio cream mixture for about 10 minutes before using.
- Once the cake is cool, spread the pistachio cream mixture evenly over the cake.
- Top with the remaining tub of whipped topping, sprinkle with chopped pistachios, and add maraschino cherries or white chocolate shavings, if desired.
- Chill the cake in the refrigerator for at least 2-4 hours (overnight for best results).
- Slice, serve, and enjoy chilled!
