Description

Ingredients

  • 1 box (15.25 oz) white or yellow cake mix
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 cup cold water
  • 2 boxes (3.4 oz each) instant pistachio pudding mix
  • 2 cups cold milk
  • 1 tub (8 oz) whipped topping, thawed
  • 1 tub (8 oz) whipped topping
  • 1/2 cup chopped pistachios, shelled and unsalted
  • Optional: maraschino cherries or white chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, combine the cake mix, the instant pistachio pudding mix, vegetable oil, eggs, and cold water.
  3. Beat the mixture for 2-3 minutes until it becomes smooth and fluffy.
  4. Pour the batter into a greased 9×13 inch baking dish, spreading it evenly.
  5. Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean.
  6. Once baked, let the cake cool completely on a wire rack.
  7. In a separate bowl, whisk together the pistachio pudding mix and cold milk for about 2 minutes, until the mixture thickens.
  8. Gently fold in one tub of whipped topping to create a light, airy mixture.
  9. Refrigerate this pistachio cream mixture for about 10 minutes before using.
  10. Once the cake is cool, spread the pistachio cream mixture evenly over the cake.
  11. Top with the remaining tub of whipped topping, sprinkle with chopped pistachios, and add maraschino cherries or white chocolate shavings, if desired.
  12. Chill the cake in the refrigerator for at least 2-4 hours (overnight for best results).
  13. Slice, serve, and enjoy chilled!
