- 2 1/2 cups bread flour or all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 2 large eggs, room temperature
- 1 tbsp honey or sugar
- 2 tbsp olive oil or melted butter
- 1/2 tsp salt
- 1/4 cup warm water (100–110°F)
- 1 tbsp flaxseed, chia seeds, or sunflower seeds (optional)
- 1 tsp dried herbs like rosemary or thyme (optional)
- 1/4 cup rolled oats for mixing in or topping (optional)
- 1 egg for egg wash (optional)
- 1 tbsp water (optional)
- Extra oats or seeds for garnish (optional)
Instructions
- Activate the Yeast: Mix honey into warm water and sprinkle active dry yeast on top. Let it sit for 5-10 minutes until frothy.
- Mix the Dough: In a large bowl, combine cottage cheese, eggs, olive oil, and salt. Stir in the yeast mixture, then gradually add flour until a soft dough forms. Knead for 6-8 minutes until elastic.
- First Rise: Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours until doubled.
- Shape the Loaf: Punch down the risen dough, shape it into a loaf, and place it in a greased pan. Let it rise again for 30-45 minutes.
- Bake the Bread: Preheat the oven to 350°F (175°C). Brush the top with egg wash, sprinkle oats/seeds, and bake for 30-35 minutes until golden brown. Cool for 10 minutes before removing from the pan.
Notes
Ensure the yeast is alive by checking for froth. Store at room temperature wrapped in a cloth or freeze slices for longer preservation.
