Description

A quick and easy recipe for flavorful chicken tacos made in an Instant Pot, packed with protein and perfect for weeknight dinners.


Ingredients

  • 1 pound chicken breast
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 cup salsa
  • Taco shells or tortillas
  • Toppings: shredded cheese, lettuce, tomatoes, avocado

Instructions

  1. Place the chicken breast in the Instant Pot flat at the bottom.
  2. Pour the chicken broth, taco seasoning, and salsa over the chicken.
  3. Seal the lid and cook on high pressure for 10 minutes with the vent closed.
  4. Once cooking is complete, quick release the pressure.
  5. Shred the chicken in the pot using two forks.
  6. Serve in taco shells or tortillas with your choice of toppings.

Notes

For deeper flavor, marinate chicken beforehand. Experiment with different salsas and add black beans or corn for variation.
