- 1 cup unsalted pistachios
- 2 cups plain full-fat Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Chop half of the pistachios and set them aside.
- In a blender, combine Greek yogurt, honey or maple syrup, vanilla extract, and salt. Blend until smooth.
- Gently fold in remaining chopped pistachios.
- Pour mixture into an airtight container.
- Freeze for about 4 hours or until solid.
- Serve in chilled bowls or cones, topped with extra pistachios or chocolate shavings.
Notes
For low-sugar or dairy-free alternatives, use sugar-free honey and plant-based Greek yogurt.
