Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 lb ground beef or chicken
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions

  1. In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, egg, and ground beef or chicken. Mix well and roll into small meatballs, about an inch in diameter.
  2. In a large pot, heat a splash of olive oil over medium heat and sauté the chopped onion, minced garlic, diced carrot, and diced celery for about 5-7 minutes until tender.
  3. Pour in the chicken broth and bring it to a boil.
  4. Carefully add the meatballs into the boiling broth and let them simmer for about 10 minutes until cooked through.
  5. Stir in the fresh spinach and season with salt, pepper, and Italian seasoning to taste.
  6. Let the soup simmer for an additional 5 minutes before serving hot.
