- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 lb ground beef or chicken
- 1 carrot, diced
- 1 celery stalk, diced

- 8 cups chicken broth
- 2 cups fresh spinach

Instructions
- In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, egg, and ground beef or chicken. Mix well and roll into small meatballs, about an inch in diameter.
- In a large pot, heat a splash of olive oil over medium heat and sauté the chopped onion, minced garlic, diced carrot, and diced celery for about 5-7 minutes until tender.
- Pour in the chicken broth and bring it to a boil.
- Carefully add the meatballs into the boiling broth and let them simmer for about 10 minutes until cooked through.
- Stir in the fresh spinach and season with salt, pepper, and Italian seasoning to taste.
- Let the soup simmer for an additional 5 minutes before serving hot.
