Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 3 cups cooked rice

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly oil a large baking sheet.
  2. In a small bowl, combine soy sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper. Whisk until fully blended.
  3. Lay the chicken breasts in the center of the baking sheet.
  4. Spread pineapple chunks, red and green bell peppers, and red onion around the chicken.
  5. Drizzle the sauce over everything and toss to coat.
  6. Roast for 20 to 25 minutes, flipping the chicken halfway through, until cooked through.
  7. Let the dish rest for a few minutes, then serve over rice, topped with the pan sauce.

Notes

For a healthier alternative, use low-sugar soy sauce and brown rice or quinoa.
