- 4 boneless skinless chicken breasts
- 1 cup pineapple chunks
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 3 cups cooked rice
Instructions
- Preheat your oven to 400°F (200°C) and lightly oil a large baking sheet.
- In a small bowl, combine soy sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper. Whisk until fully blended.
- Lay the chicken breasts in the center of the baking sheet.
- Spread pineapple chunks, red and green bell peppers, and red onion around the chicken.
- Drizzle the sauce over everything and toss to coat.
- Roast for 20 to 25 minutes, flipping the chicken halfway through, until cooked through.
- Let the dish rest for a few minutes, then serve over rice, topped with the pan sauce.
Notes
For a healthier alternative, use low-sugar soy sauce and brown rice or quinoa.
