Description

Learn how to make fluffy, tender scones that are delightful for breakfast or tea parties.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon salt
  • 2 and 1/2 teaspoons baking powder
  • 1/2 cup (113g) unsalted butter, frozen
  • 1/2 cup (120ml) heavy cream or buttermilk (plus 2 Tbsp for brushing)
  • 1 large egg
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 to 1.5 cups optional add-ins (chocolate chips, fresh berries, nuts, or dried fruits)
  • Optional: Coarse sugar for topping

Instructions

  1. Preheat the oven to 400°F (204°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, salt, and baking powder.
  3. Grate the frozen butter into the flour mixture, integrating until it resembles pea-sized crumbs.
  4. In a separate bowl, whisk together heavy cream, egg, and vanilla extract, then pour over the dry ingredients.
  5. Gently fold the mixture until just combined; add optional extras if desired.
  6. Shape the dough into an 8-inch disc, 1-inch thick, and cut into 8 wedges.
  7. Brush tops lightly with reserved cream and sprinkle with coarse sugar if desired.
  8. Chill the dough for at least 15 minutes before baking.
  9. Arrange scones on baking sheets and bake for 18-22 minutes until golden brown.
  10. Cool on a wire rack before serving warm.

Notes

Use frozen butter for the flakiest texture. Experiment with seasonal flavors for variation. Store in an airtight container for up to two days or freeze for longer storage.
