  • 1/2 cup erythritol

  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/2 cup dried cranberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, coconut flour, erythritol, and salt.
  3. In a large bowl, cream softened butter until light and fluffy, about 2-3 minutes.
  4. Add egg and vanilla extract to the creamed butter, mixing until combined.
  5. Gradually incorporate the dry mixture into the wet ingredients until a dough forms.
  6. Fold in orange zest and chopped cranberries.
  7. Using a cookie scoop or spoon, portion dough onto the prepared baking sheet.
