A delightful twist on a classic, combining sweet potatoes with rich cheeses and marinara sauce.

- 3 large sweet potatoes, sliced thinly
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach, chopped
- 1 jar marinara sauce
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix ricotta cheese, chopped spinach, minced garlic, dried oregano, salt, and black pepper until well combined.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer sweet potato slices evenly over the marinara sauce.
- Spoon half of the ricotta-spinach mixture on top of the sweet potato layer.
- Sprinkle a layer of shredded mozzarella cheese over the ricotta mixture.
- Repeat the layering process with marinara sauce, sweet potato slices, ricotta mixture, and mozzarella cheese until all ingredients are used.
- Finish with a sprinkle of grated Parmesan cheese on the top layer.
- Cover the dish with foil and bake for 40 minutes.
- Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
For added protein, consider incorporating cooked ground turkey or chicken, or different vegetables for extra flavor. Store leftovers in an airtight container for up to three days.
