Description

A delightful dessert combining the tang of lemon curd with nutty chia seeds, rich in nutrients and perfect for any time of day.

Ingredients

Scale
  • 1 cup almond milk (or any milk of your choice)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup lemon curd (store-bought or homemade)
  • Zest of 1 lemon
  • Fresh berries (for topping, optional)
  • Mint leaves (for garnish, optional)

Instructions

  1. In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk well to ensure the chia seeds are evenly distributed.
  2. Cover the bowl and refrigerate for at least 4 hours or overnight.
  3. After the chia pudding has set, stir it well to break up any clumps.
  4. In a separate bowl, mix the lemon curd and lemon zest until fully combined.
  5. Layer chia pudding and lemon curd in serving glasses until filled, finishing with a dollop of lemon curd on top.
  6. Top with fresh berries and mint leaves, if desired. Serve immediately or refrigerate before serving.

Notes

Consider adding a pinch of sea salt to enhance flavors. For variations, try different milk alternatives or incorporate tropical fruits.
