Instructions
- In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk well to ensure the chia seeds are evenly distributed.
- Cover the bowl and refrigerate for at least 4 hours or overnight.
- After the chia pudding has set, stir it well to break up any clumps.
- In a separate bowl, mix the lemon curd and lemon zest until fully combined.
- Layer chia pudding and lemon curd in serving glasses until filled, finishing with a dollop of lemon curd on top.
