Ingredients

  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup milk
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)
  • 1/2 teaspoon lemon zest (optional, for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it and lining it with parchment paper.
  2. In a medium bowl, whisk together the sifted flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest, fresh lemon juice, and vanilla extract.
  5. Gradually incorporate the dry ingredients into the mixing bowl, alternating with the sour cream and milk until just combined.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.
  9. For the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.
