Description

A delightful loaf that combines zesty lemon with nutty pistachios for a heartwarming treat, perfect for brunch or an afternoon snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup sour cream
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup ground pistachios
  • 1/4 cup chopped pistachios for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, scraping down the sides of the bowl as needed.
  5. Stir in the vanilla extract, sour cream, lemon zest, and lemon juice until combined.
  6. Gradually add the dry ingredients into the wet mixture, mixing just until combined.
  7. Gently fold in the ground pistachios.
  8. Pour the batter into the prepared loaf pan and sprinkle the chopped pistachios on top.
  9. Bake for 45-55 minutes, or until a toothpick comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, consider using a low-sugar sweetener, plant-based butter, or whole wheat flour.
