- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup sour cream
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- 1/2 cup ground pistachios
- 1/4 cup chopped pistachios for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a standard loaf pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, scraping down the sides of the bowl as needed.
- Stir in the vanilla extract, sour cream, lemon zest, and lemon juice until combined.
- Gradually add the dry ingredients into the wet mixture, mixing just until combined.
- Gently fold in the ground pistachios.
- Pour the batter into the prepared loaf pan and sprinkle the chopped pistachios on top.
- Bake for 45-55 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter version, consider using a low-sugar sweetener, plant-based butter, or whole wheat flour.
