- 2 heads of gem lettuce or 1 large romaine lettuce, leaves separated
- 1 cup cherry tomatoes, cut into halves
- 2 Tbsp extra virgin olive oil
- 1 Tbsp white or red vinegar
- 1 Tbsp grated parmesan cheese
- 1 small garlic clove, pressed or grated
- 1/2 tsp Italian herb seasoning
- 1/2 tsp honey or maple syrup
- 1/4 tsp chili flakes (optional)
- 1/4 tsp fine salt, plus more to taste
- 1/8 tsp black pepper, plus more to serve
Instructions
- Wash the Lettuce: Rinse the crisp leaves gently under cold water, then dry them well.
- Chop or Tear into Pieces: Tear or chop the lettuce into bite-sized pieces.
- Prepare the Tomatoes: Wash the cherry tomatoes and slice them in half.
- Combine in a Large Bowl: Toss the lettuce and tomatoes together in a large salad bowl.
- Make the Dressing: Whisk together the olive oil, vinegar, garlic, Italian herb seasoning, honey or maple syrup, chili flakes (if using), salt, and black pepper in a small jug.
- Dress the Salad: Pour the dressing over the salad and toss gently to combine.
- Taste and Adjust: Adjust the seasoning with salt and pepper as needed.
- Serve: Enjoy with crusty bread on the side.
Notes
Best enjoyed fresh; store leftovers in an airtight container in the fridge for up to a day. Separate the dressing until ready to serve.
