Description

A vibrant and refreshing lettuce salad with tangy Italian dressing, perfect for a light lunch or a side dish.


Ingredients

  • 2 heads of gem lettuce or 1 large romaine lettuce, leaves separated
  • 1 cup cherry tomatoes, cut into halves
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp white or red vinegar
  • 1 Tbsp grated parmesan cheese
  • 1 small garlic clove, pressed or grated
  • 1/2 tsp Italian herb seasoning
  • 1/2 tsp honey or maple syrup
  • 1/4 tsp chili flakes (optional)
  • 1/4 tsp fine salt, plus more to taste
  • 1/8 tsp black pepper, plus more to serve

Instructions

  1. Wash the Lettuce: Rinse the crisp leaves gently under cold water, then dry them well.
  2. Chop or Tear into Pieces: Tear or chop the lettuce into bite-sized pieces.
  3. Prepare the Tomatoes: Wash the cherry tomatoes and slice them in half.
  4. Combine in a Large Bowl: Toss the lettuce and tomatoes together in a large salad bowl.
  5. Make the Dressing: Whisk together the olive oil, vinegar, garlic, Italian herb seasoning, honey or maple syrup, chili flakes (if using), salt, and black pepper in a small jug.
  6. Dress the Salad: Pour the dressing over the salad and toss gently to combine.
  7. Taste and Adjust: Adjust the seasoning with salt and pepper as needed.
  8. Serve: Enjoy with crusty bread on the side.

Notes

Best enjoyed fresh; store leftovers in an airtight container in the fridge for up to a day. Separate the dressing until ready to serve.
